About the Recipe
Here’s a perfect start to your day or a guilt-free snack to keep you fueled: these high-protein, refined sugar-free Blueberry and Chocolate Chip Muffins! Each muffin is a balanced blend of flavor and nutrition. Enjoy them on their own or with a dollop of Greek yogurt (or a dairy-free protein yogurt for those keeping it DF). Each muffin provides a boost of protein to support muscle recovery and keep you energized.

Ingredients
2 scoops (65 grams) protein powder (I use vanilla plant protein, can use whey for non DFO)
1 tsp baking powder
½ cup almond flour
2 eggs
½ cup + 1 tbsp oat milk
¼ cup + 1 tsp maple syrup
1 tsp vanilla extract
½ cup blueberries and/or chocolate chips
¼ cup Greek yogurt for serving (dairy free protein yogurt for DFO)
Preparation
Step 1
Preheat the oven to 180°C. Line a muffin tin with 8 muffin liners and set aside.
Step 2
In a large mixing bowl, add your dry ingredients and mix well.
Step 3
In a separate bowl, whisk together your eggs, oat milk, maple syrup and vanilla extract.
Step 4
Fold the wet ingredients into the dry ingredients until combined. Mix in the blueberries and/or chocolate chips.
Step 5
Divide the batter between the muffin liners and bake for 15-20 minutes, or until a skewer comes out clean.
Step 6
Allow the muffins to cool for 5 minutes before transferring them to a wire rack to completely cool.
